Adobo Stuffed Pork Loin

Ingredients
- 3 lbs pork loin
- 2 potatoes
- 3 carrots
- 2 zucchinis
- Johnny’s seasoning
- 1 can of diced pineapple
- 1 cup of pineapple juice
- Bacon to your taste
- 1 cup of Chiles en Adobo
- 1 container of La Popular Makatlan birria sauce
Directions
- Preheat oven to 400° F.
- Pour Birria sauce into a blender, and add 1 cup of pineapple juice. Blend until smooth.
- Season your pork loin with Johnny’s seasoning or seasonings of your choice.
- Pour enough of the blended mixture onto the pork loin to fully coat it, then place it into an oven pan. Top the loin with the zucchinis, carrots, and bacon, then roll the lion up burrito style with the vegetables inside.
- Place pineapples around the rolled pork loin in the pot. Take the remaining blended birria sauce/ pineapple juice mixture and pour it all over the loin and the pineapples. Cover the pan with aluminum foil.
- Place in the oven, bake for an hour and 30 minutes.
